Cinnamon Swirl Cake~Almond Flour
Ingredients
1 ¼ cup of almond flour
2 tablespoons of coconut oil
3 tablespoons of butter
¼ cup of ricotta cheese ( can sub sour cream or yogurt)
2 scoops of vanilla protein powder
2 eggs
2 tsp of vanilla
1 tsp of almond extract
1 tsp apple cider vinegar
1 tsp of baking powder
Cinnamon filling
:¼ cup of coconut palm sugar or sweetener of choice
substitute 3 oz of butter- melted
1 tablespoon of almond flour
1-2 tsp of cinnamon
Glaze topping:1 oz of cream cheese
1 oz heavy cream
1 tablespoon of protein powder or sweetener
1 tsp of vanilla
Preparation
Preheat the oven to 350 degrees. Combine cake ingredients, spread in an 8x8 sprayed baking dish or lined with parchment paper.Mix the cinnamon filling together. With a knife, swirl it into the cake batter. Bake for 30-35 minutes. Combine the glaze topping, spread on top of the warm cake.
