BEEF CAULIFLOWER SOUP
This is my take on Beef barley soup. I tried to recreate this for my boyfriend, a healthier version of what his mom used to make.
- 3 cups of beef broth
- ¼ cup tomato sauce
- 1 pound of ground beef
- 1 bag of riced cauliflower- cooked and drained
- ½ onion chopped
- 2 carrots chopped
- 2 tsp of garlic powder
- Brown ground beef until no longer pink. Add in onion and carrots.
- Stir in the sauce, garlic powder and broth. Bring to a boil then let it simmer.
- I transferred mine to a crockpot on low for 2 hours.
